This Mediterranean Orzo Salad with Grilled Greens is a wholesome plant-based pasta salad filled with summer season squash, onions, bell peppers, cherry tomatoes, olives, herbs, and pine nuts tossed in a recent tomato lemon French dressing. Good for meal prep, picnics, potlucks, and events.

Pasta:

Tomato Lemon French dressing:

  • 2 tablespoons further virgin olive oil
  • 2 tablespoons tomato paste
  • ¼ cup lemon juice, freshly squeezed
  • Pinch black pepper
  • 1/4 teaspoon salt (non-obligatory)
  • ½ cup olives, pitted, drained
  • 2 tablespoons toasted pine nuts

Salad Components:

  • 1 cup cherry tomatoes, halved
  • ½ cup olives, pitted, combined, drained
  • ¼ cup chopped recent oregano (or 2 teaspoons dried)
  • 2 tablespoons pine nuts
